Virtual Happy Hour – Celebrating the Mai Kai

Join us as we celebrate the oldest and last-remaining Tiki Palace in the United States, Ft. Lauderdale’s own Mai Kai! Opened in 1956, this historic bastion of tiki culture is at risk of being lost to future generations. Together we’ll whip up some of their famous cocktails and savory snacks!

Black Magic

  • 1.25 oz. fresh orange juice
  • 1.25 oz. fresh lime juice
  • 1.25 oz. fresh grapefruit juice
  • 3/4 oz. honey syrup
  • 1.5 oz. chilled black coffee
  • 1.5 oz. dark Jamaican rum
  • 1 oz. gold rum
  • 1 oz. dark rum (Bacardi Black or similar)
  • 1/4 tsp. Absinthe
  • 1 tb. Falernum
  • 1/4 tsp. vanilla
  • 1/4 tsp. allspice syrup
  • 2 dashes of angostura bitters

Shake or stir all ingredients and serve in a large snifter glass filled with crushed ice. Garnish with an umbrella and a fresh orchid.

The Shrunken Skull

  • 1 oz. fresh lime juice
  • 1 oz. grenadine
  • 3/4 oz. rich simple syrup
  • 1/4 tsp. allspice dram (allspice flavored simple syrup)
  • 1/2 tsp. Falernum
  • 2 oz. Puerto Rican gold rum
  • 1 oz. 151 Demerara Rum
  • splash of club soda

Shake all ingredients except for club soda in a shaker tin with ice. Pour into a mug filled with crushed ice and top with club soda and garnish with a cinnamon stick.

Jet Pilot

  • 3/4 oz. fresh lime juice
  • 3/4 oz. rich honey syrup (2:1 honey to water ratio)
  • 1 tsp. Falernum
  • 1/4 tsp. Fassinola Syrup
  • 1/2 oz. Passion Fruit Syrup
  • 3/4 oz. White Puerto Rican Rum
  • 3/4 oz. Gold Puerto Rican Rum
  • 3/4 oz. Dark Jamaican Rum
  • 3/4 oz. 151 Demerara Rum
  • 2 dashes Angostura bitters
  • 1 drop of Pernod
  • 1/2 oz. club soda.

Shake all ingredients except club soda in a shaker tin. Pour into a mug filled with crushed ice. Top with club soda.

To go with these potent cocktails, we’ll be whipping up some appetizers from the Mai Kai menu: Cantonese Fried Shrimp, Spicy Tuna Roll, and Nams (Vietnamese crispy spring rolls with crab, pork and rice noodles served with a spicy garlic sauce).
